turmeric dill rice
This aromatic and energizing rice has a subtle flavor of dill, which can clear sinuses and reduce congestion. Turmeric invigorates the blood and detoxifies the liver, particularly important in the Spring season.
ingredients
1 tbsp. ghee
1 c. basmati rice
1 tsp. salt (to taste)
1½ c. hot water
1 tsp. turmeric
½ c. finely chopped dill
1 tsp. lime juice
prepare
• Wash rice thoroughly
• Soak in water for 20 minutes
• Drain in strainer
cook
- In a large heavy bottomed pan, heat the ghee on medium heat
- Add the rice and salt, coating the rice completely
- Add the hot water and turmeric
- Bring to a boil, reduce heat, then cook until most of the water is absorbed
- Add the finely chopped dill and lime juice and stir very gently, so as not to break up the rice
- Cover and simmer for 10 minutes until rice is completely cooked
- Fluff with a fork and let it rest for a few minutes
- Serve hot
